Kochi has an international reputation for high-quality sake. It is considered the driest sake in Japan, with a clear aftertaste. The people of Kochi enjoy sake, and the region has developed crisp, dry sakes with less sweetness, that are ideal for drinking. The region has a mild climate and some of Japan’s purest waters, which produce refined brews. The spirit of cooperation is strong in Kochi and as well as developing Kochi’s own yeast, the 18 breweries in Kochi work together to share and study data on conditions and production with each other. This culture of sharing knowledge and improving together is different from other sake producing areas in Japan, and helps Kochi’s breweries to create high-quality sake.
