Shishito look like green chilis, but the small peppers have a mild sweetness with just a hint of warmth. Shishito are usually cooked whole—grilled, stir fried, or fried in tempura batter. In Kochi, shishito are grown in open fields and greenhouses for year-round production. During winter and spring, Kochi accounts for about 50 percent of Japan’s shishito yield.
