Shiso is a quintessential herb in Japanese cuisine, used much like basil and mint are used in Western cuisine. It has a refreshing aroma. The leaves are finely shredded and served as a garnish, or used to wrap grilled meat or fish. Shiso has become popular around the world as a cocktail ingredient, adding a refreshing herbal note to white spirits. In Kochi, shiso is grown all year in greenhouses.
